Best scallop recipe with bacon
Ingredients
  • 1 1/2 pound large scallops
  • 1/2 pound thin-sliced bacon
  • Extra-virgin essential olive oil
  • Ocean salt and freshly ground pepper
  • 1 cup top quality mayonnaise
  • 1/4 cup hot chili paste (suggested: Sriracha Hot Chili Paste)
  • 1 lime, juiced
  • two tablespoons chopped cilantro, plus much more for garnish
  • 2 heads Bibb lettuce, washed
  • 3 avocados, sliced
Directions

Heat the broiler. Wrap each scallop in a bit of bacon and secure it having a toothpick. Put the bacon wrapped scallops onto a baking sheet, drizzle all of them with essential olive oil, and season all of them with pepper and salt. Prepare them underneath the broiler for around ten to fifteen minutes before the bacon is cooked through, turning once.

Result in the spicy mayo by mixing the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until available.

For everyone, carefully peel away the lettuce leaves and line a sizable platter using the lettuce cups. Top each having a bacon-wrapped scallop, 2 slices of avocado, along with a spoonful of spicy mayonnaise. Garnish with cilantro leaves.
