Turkey bacon roll ups recipe

4 tablespoons butter
1 large crisp apple, for example Pink Lady, Macoun or Honeycrisp, finely chopped
2 ribs celery with leafy tops, finely chopped
1 onion, finely chopped
1 1/2 cups seasoned stuffing (preferred brand Pepperidge Farm) or large homemade white-colored breadcrumbs toasted with salt, pepper and a pair of teaspoons Bells chicken seasoning
2 boneless poultry breasts, 1 1/2 to two pounds each
two tablespoons each finely chopped thyme, sage and parsley
1/2 pound grated sharp white-colored cheddar, 2 cups
1 pound lean top quality smoky bacon
two tablespoons canola or essential olive oil

For that Poultry Pan Gravy:
4 tablespoons butter
Coarse pepper
4 tablespoons flour
1/2 cup dry white-colored wine
2 cups poultry or chicken stock plus pan drippings
1 tablespoon Worcestershire sauce

Preheat oven to 400F with rack at center of oven.

Heat butter inside a large skillet over medium to medium-high temperature. When foamy, add apple, celery and onion, and prepare to tender, partly covered, for 8-ten minutes stirring from time to time. Add stuffing or breadcrumbs and fresh herbs, and awesome.

Pat poultry dry and put between plastic or parchment. Pound into large rectangular shapes about 1/2-inch thick. Season with pepper and salt liberally on sides.
Cover poultry breasts with stuffing then some cheese and tightly wrap and roll.
