Recipe for cooked spinach with bacon
Ingredients
  • 1 pound green spinach, coarse stems discarded leaving washed well and spun dry (about 6 cups)
  • 10 ounces mushrooms, sliced thin
  • 3 slices bacon, cooked until crisp, drained and crumbled
  • 2 scallions, minced
  • 2 hard steamed eggs, chopped
  • 1/4 cup green spinach salad dressing (recipe follows)
  • Green spinach SALAD DRESSING:
  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon tarragon vinegar
  • 1 tablespoon mayonnaise
  • 3/4 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon sugar
  • 1 really small garlic clove clove, chopped
  • 1 cup essential olive oil
Directions

Chiffonade green spinach and put on platter. Mound mushrooms in center of platter. Sprinkle bacon, scallions, and difficult steamed egg around mushrooms and green spinach. Drizzle with dressing.

Green spinach SALAD DRESSING :

Inside a mixer blend all ingredients except oil until smooth with motor running add oil inside a stream, blending until emulsified. Transfer dressing to some jar and chilled, covered, until serving Yield: 1 1/4 cups
