- 1 eco-friendly bell pepper, sliced
- 2 red peppers, sliced
- 4 celery stalks, chop up
- ½ red onion, sliced
- Melted butter
- Toss chicken with essential olive oil.
- Combine spices and sprinkle generously over chicken and underneath the skin.
- Cover at let sit overnight or not less than 4 hrs
- Preheat oven to 425.
- Line a casserole dish with foil.
- Spread peppers, onions and celery within an even layer in pan.
