Here's a summary of things that you'll need:- three or four small ears of fresh corn
- 1 16-ounce can of black beans, drained and rinsed completely
- 1 large tomato diced and seeded
- 1 large clove garlic clove, minced
- 1/4 cup minced red onion
- two to three tablespoons finely minced jalapeno or Poblano pepper. Make sure to handle your peppers carefully and wash both hands before touching your vision. The pepper juice is extremely potent and may sting.
- About 3 tablespoons fresh lime juice
- 3 tablespoons fresh chopped cilantro
- Pepper and salt to taste

Let's begin with some fresh corn around the cob. Make sure to buy corn with fresh eco-friendly husks. When the husks are removed the corn has most likely aged prematurely. You'll have to prepare your corn within 24 hrs of purchase. Take away the husks and corn silk and drop them into unsalted boiling water. Don't add salt towards the corn because it'll make the corn tough. Boil the corn for ten to fifteen minutes and don't overcook them. Take away the corn and allow them to awesome completely. Now bring your cooled corn, with a clear, crisp knife carefully stop the corn from both sides from the cob all the way through and put the corn inside a bowl.
