Ingredients
1 whole chicken (about 3lb)
A a little lime juice
1 teaspoon of salt
1 teaspoon of pepper
1 onion
3 stalks of scallion
1 hot pepper (ideally scotch bonnet )
1 sweet pepper
3 cloves of garlic clove
1/2 inch of ginger root
3 tomato plants
Oil for frying
3 tablespoons flour
3 sprigs of fresh thyme (or 3 teaspoons of dried thyme)
1 tablespoon of browning
two tablespoons of soy sauce
2 glasses of water
Cooking
Chop the onion, scallion, hot pepper, sweet pepper, garlic clove and tomato plants directly into small pieces, grate the ginger root and blend the flour in 1/4 cup water.
Season the chicken by rubbing in salt, pepper, thyme, onion, scallion, hot pepper, sweet pepper, garlic clove, ginger root and tomato.
Leave to marinate for just one hour
Scrape the seasoning from the chicken and fry within the oil before the chicken is sealed (about 5 minuted).
Melt the butter within the saucepan and fry the onion, scallion, hot pepper, sweet pepper, garlic clove, tomato plants and thyme for 3 minutes
