Indian curry beef stew recipe

Kerala-Style Beef Stew

This aromatic coconut milk-based curry from chef Asha Gomez of Atlanta's Cardamom Hill delivers big flavor for this beef stew with hardly any work. "It is a complete meal, a 1-dish question," Gomez states.

Ingredients

  • 3 tablespoons vegetable oil, divided
  • 1 1/2 pounds beef chuck, reduce 1' pieces
  • Kosher salt
  • 1 teaspoon coarsely ground pepper plus much more for seasoning
  • 5 garlic clove cloves, chopped
  • 3 serrano chiles, seeded, chopped
  • 1 1x1-inch piece ginger root, peeled, thinly sliced
  • 1 teaspoon ground turmeric
  • 3 cups low-salt chicken broth
  • 1/2 pound small carrots, scrubbed or peeled, halved lengthwise
  • 1/2 pound baby red-skinned taters (about 1 1/2'-diameter), halved, or quartered if large
  • 1/4 pound frozen, thawed gem onions, halved
  • 2 cups canned unsweetened coconut milk
  • Cilantro sprigs

Heat 1 1/2 Tablespoons of. oil inside a large heavy pot over medium-high temperature. Season beef with pepper and salt. Employed in 2 batches and adding remaining 1 1/2 Tablespoons of. oil between batches, add beef and sear, turning from time to time, until browned on every side, about a few minutes. Transfer beef to some plate.

Stir in garlic clove, chiles, and ginger root and prepare, stirring frequently, until aromatic, a couple of minutes. Add 1 teaspoon. pepper and turmeric prepare, stirring constantly, until aromatic, about one minute. Add broth and reserved beef provide a boil, scraping up any browned bits from the foot of pot. Reduce heat to medium-low, cover pot, and simmer, stirring from time to time, until beef is tender, about forty-five minutes.

Add carrots, taters, and onions. Cover and simmer, stirring from time to time, until vegetables are tender, 15–20 minutes. Stir in coconut milk.

Divide among bowls. Garnish with cilantro.
