Thanks Elise! Just finished straining the sauce. It’s within the fridge. I’ll finish it tomorrow. There appear to become a substantial amount of fat and so i can spoon a number of that off after it cools too. 325 degree oven labored perfectly for me personally. The oven really provided additional control. My electric stove is very variable and that i can't ever obtain a good low simmer (argh!).
