I bet you've all of the ingredients with this cake batter in your cupboard to get baking immediately. Use canned, frozen or fresh, pitted cherries to create this straightforward picnic cake. Even though it is sturdy enough to become eaten beyond control, placing it on the plate along some whipped cream won't harm it whatsoever.

I chose to make this cake in to the popular 9 x 13 inch size. If you prefer a sheet cake size (10 x 15 inch cookie sheet or roasting pan sized), because they do in Germany, simply double the amount recipe.

Add some eggs and beat until batter is smooth.

Add all of those other flour and blend in, adding the sour cream and blend until smooth. The batter is going to be thick, like brownie batter.

Line a 9 x 13 inch pan with parchment paper and oil and flour the edges (or make use of a spray oil for baking). Spread the batter within the pan having a spatula about 3/4 inch deep.

Space the cherries on the top from the batter. Lay them heavily, but let a few of the batter show whenever you're done.

Bake at 390°F (200°C) for 30 to 35 minutes. Remove from oven and sift powdered sugar within the cake while warm. Serve warm or cold.

Suggestions for Flavors and Serving:

You can put the cherries very evenly so that you can cut the wedding cake around them into little, bite-sized squares with one cherry inside each square. This could go well in a picnic or potluck.

You should use any type of berry or fruit you want with this particular cake.

Try some vanilla, almond extract or perhaps a couple of drops of lemon extract to improve the taste profile.

You may also sprinkle the top cake with sliced almonds before baking.
