  • 3/8 cup (6 tablespoons) butter
  • 3/4 cup sugar
  • 1 1/2 teaspoons cinnamon

  • 149g sugar
  • 1 1/4 teaspoons salt
  • 1 teaspoon grated lemon rind, or 1/8 teaspoon lemon oil
  • 11g active dry yeast or 7g instant yeast
  • 1/2 teaspoon vit c. optional
  • 57g tepid to warm water
  • 1 large egg
  • 659g to 723g King Arthur Unbleached All-Purpose Flour
  • 85g butter, melted
  • thinly sliced fruit or whole berries

Streusel Topping

  • 163g King Arthur Unbleached All-Purpose Flour
  • 85g butter
  • 149g sugar
  • 1 1/2 teaspoons cinnamon

Instructions

  1. To help make the coffeecake: Pour the scalded milk right into a large mixing bowl, and add some butter (reduce pats), sugar, salt and lemon rind or oil. Set the mix aside to awesome.
  2. In a tiny bowl, dissolve the yeast (and vit c) in tepid to warm water.
  3. Once the milk mixture is lukewarm (110 to 115°F), beat within the egg, adding the yeast mixture. Stir to combine the 2.
  4. Stir within the flour, adding sufficient to create a sticky dough.
  5. Turn the dough out onto well-floured work surface and knead, adding more flour as necessary, until it's smooth and satiny. Or, knead the dough inside a mixer utilizing a dough hook. Within this situation, a mixer is most likely more suitable, while you will not be enticed to drink too much flour for this very sticky dough.

Excellent. I chose to make this inside a deep-dish cake plate and 11x13 baking dish, one with particularly and something with blackberries. This is an excellent recipe, however the word kuchen doesn't result in coffe cake. It simply means cake. Kuchen ist immer gut durch fruechten!
