Blueberry muffins muffin mania recipe

Ingredients

  • ½ c. unsalted butter
  • ¾ c. sugar
  • 1 teaspoon. sugar
  • 2 large eggs
  • 2 c. fresh particularly
  • 1 tablespoons of. grated lemon zest (from 1 lemon)
  • 1 c. all-purpose flour (spooned and leveled)
  • 1 c. yellow cornmeal
  • 2 teaspoon. baking powder
  • ½ teaspoon. salt
  • ½ c. milk

Directions

  1. Preheat oven to 375 levels. Line a typical (12-cup) muffin tin (or two 6-cup tins) with paper cups. By having an electric mixer, cream butter and threeOr4 cup sugar on medium-high-speed until fluffy. Add eggs, individually beat until combined.
  2. Inside a shallow bowl, mash 1/2 cup particularly having a fork until liquefied. Increase butter mixture, together with lemon zest beat to include (mixture can look separated).
  3. Inside a large bowl, whisk together flour, cornmeal, baking powder, and salt. Progressively add flour mixture and milk towards the butter mixture in alternating batches, beginning and ending using the flour. Lightly fold in remaining 1 1/2 cups particularly.
