  • 4 ounces raisins (golden are nice)
  • 3 ounces chopped walnuts

  • 106g wheat grains pastry flour or King Arthur White-colored Wheat Grains Flour
  • 89g King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon salt
  • 1/2 teaspoon sodium bicarbonate
  • 1/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 340g shredded, unpeeled zucchini (1 promising small to medium)
  • 113g raisins (golden are nice)
  • 85g chopped walnuts

Instructions

  1. Preheat the oven to 350F gently grease a typical 8 1/2" by 4 1/2" loaf pan, or line it with parchment. Inside a large mixing bowl, beat the eggs, oil, molasses, sugar, and vanilla until smooth.
  2. Inside a separate bowl, whisk together the flours, sodium bicarbonate, baking powder, salt and cinnamon.
