Serves: 2 loaves

  • (makes 2 loaves) 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon of sodium bicarbonate
  • 1 teaspoon baking powder 2 teaspoons of cinnamon 1 teaspoon ginger root
  • 1 cup white-colored sugar
  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 3 eggs
  • 2 teaspoons vanilla flavoring
  • 2-3 cups grated zucchini
  • 1 cup chopped walnut or pecans (optional)
  1. Inside a large bowl combine, flour, salt, sodium bicarbonate, baking powder, cinnamon, ginger root.
  2. Whisk until combined. Put aside.
  3. Inside a separate bowl, add white-colored sugar and oil. Mix until creamy.
  4. Add brown sugar, eggs, & vanilla.
  5. Add some dry mixture in to the wet mixture and stir until combined.
  6. Grate the zucchini and fold it in to the batter.
  7. Pour batter in a grease and floured loaf pans.
  8. Bake for 45-an hour inside a 325 degree preheated oven.
