Cheese stuffed lamb burger recipe

These flavorful burgers by Olga Esquivel-Holman of Wichita, Kan. are full of cheese and capped having a pistachio pesto. The pesto also constitutes a great spread for poultry sandwiches or like a sauce for pasta. Esquivel-Holman would be a 2005 regional finalist in Sutter Home's Develop a Better Hamburger Contest.

Ingredients

Pistachio Pesto 1 cup shelled pistachios, divide 1 clove garlic clove 1 shallot 1 teaspoon Dijon mustard 1/2 teaspoon capers 1/2 cup fresh tulsi leaves 1 tablespoon fresh lime juice 1/4 cup extra-virgin essential olive oil 1/4 cup water Patties 2 tablespoons Dijon mustard 2 cloves garlic clove, crushed 1/4 cup dry dark wine 1 1/2 teaspoons seasoned salt 1/2 cup chopped pistachios (previously mentioned) 2 pounds ground lamb 1/2 cup Boursin or any other soft garlic clove plant cheese 6 ciabatta rolls, split and toasted 2 avocados, peeled, seeded and sliced into wedges

Instructions

  1. Place pistachios inside a mixer and pulse until chopped finely take care not to grind right into a paste. Remove 1/2 cup and hang aside for patties. Add garlic clove clove and shallot to mixer even though it is running to reduce finely. Scrape lower sides of bowl. Add mustard, capers, tulsi and lime juice process well. While running, add water and oil process until well mixed. Put aside.
  2. To create patties, combine mustard, garlic clove, wine, salt and reserved chopped pistachios. Add lamb mix lightly. Form 12 thin patties. Divide cheese among 6 patties press lightly into center. Place remaining patties on the top, press, and seal edges to surround cheese filling, developing 6 patties.
  3. Brush grill rack with oil. Place patties on rack and prepare 6 to 9 minutes on every side or preferred amount of doneness.
  4. Place burgers on roll bottoms top with avocado, pesto and bun tops.
