Pandan Chiffon Cake Recipe (Printable recipe )

Ingredients of batter:
  • 5 egg yolks
  • 20 gm caster sugar
  • 100 gm cake flour
  • 1 teaspoon baking powder
  • 100 ml coconut milk
  • 2 Tablespoons of pandan juice (see below to make pandan juice)
  • a couple of drops pandan essence/pandan paste, optional
  • 3 Tablespoons of essential olive oil
Ingredients of egg-whites:
  • 5 egg-whites
  • 60 gm caster sugar
  • ½ teaspoon cream of tartar
Ingredients of pandan juice:
  • 10 pandan leaves, fresh or frozen
  • 1½ Tablespoons of water
Method:
  1. Preheat oven to 170C (338F).
  2. Beat the egg yolks having a balloon whisk and blend in 20 grams of sugar. Add coconut milk, pandan juice, along with a couple of drops of pandan paste (if preferred). Combine well.
  3. Sift in cake flour and baking powder in three batches in to the egg yolk mixture. Mix well. Lastly, add essential olive oil. Put aside.
  4. Make use of a large clean bowl, ensuring there’s no water or oil inside it. Beat the egg-whites by having an electric mixer until bubbles form. Add some cream of tartar. Hi Chrisine - many thanks with this wonderful recipe :D ♥♥ - I attempted it yesterday and also the whole cake gone within a few minutes. D however, I must inquire:
1. if I wish to perform a simple plain (vanilla flavouring) chiffon cake, will i just substitute the 100ml coconut milk for 100ml of milk or water? (cuz my father is a huge fan of just vanilla chiffon and that i can't find the best recipe anywhere)
2. if I wish to create a cacao flavor chiffon, just substitute a tbsp . cake flour for any tbsp . of cacao powder?

You may replace with similar quantity of coconut milk. And substitute the equivalent dry ingredients if you want.
