Late summer time early fall and plums are beginning to really make it’s appearance available on the market. There are many plum varieties and the option of plum is entirely your decision. At the start of the growing season the fruits are small such as these opal plums that I have tried personally with this plum upside lower cake. I believe they're perfect not very sweet, have tender skins and fairly dinky meaning you receive more plum per bite. The Growing Season progresses quickly and you're not guaranteed to obtain the same variety in a few days. Certainly one of my favourites, the Victoria plum is able to be harvested for the finish of August and also the season can last for around three days.

You should use any plum variety with this cake because these plums were small I desired 11 in number for any 10 ” cake tin, I reckon for that bigger fruits you'll need a maximum of six or seven. I've also used dark muscovado sugar for that cake batter which will keep the wedding cake moist.

For preparing the fruit

  • 80g unsalted butter at 70 degrees
  • 80g soft light brown sugar
  • 11 small plums or 6 large plum

For that cake batter

First prepare the wedding cake tin, spread the soft butter in the bottom of a ten″ tin. Sprinkle the sugar within the butter. Wash the plums, cut them in two and take away the gemstones. Arrange the plums cut side lower to the sugar and butter layer. I pack them as tight when i can, do not concern yourself an excessive amount of about departing gaps.

Set the prepared cake tin aside although preparing the wedding cake batter.

Preheat the oven to 180°C.

For that cake batter cream the soft butter and muscavado sugar until fluffy and lightweight in colour. Add some eggs individually and cream well after each addition. Add some lemon zest, salt, flour, ground almonds and baking powder. Fold the dry ingredients in to the cake batter, don't over mix.
