Eggless Melon Cake is really a scrumptious cake created using cantaloupes. Children and grown ups alike will love this sweet dessert.

  • 3 cups flour
  • 4 teaspoon. baking powder
  • 1 cup granulated sugar
  • 1 cup butter, at 70 degrees
  • 3/4 cup curd
  • 2-1/4 cup pured orange-fleshed muskmelon (CANTALOUPE)
  • 1-1/4 cup confectioners’ sugar
  • 1/4 cup lemon or orange juice
  • 100gm white-colored chocolate
  • Couple of drops of melon essence (oil base)
  1. Preheat oven to 350°F. Sift the flour and baking powder together and hang aside in bunt cake mould.
  2. Cream the granulated sugar and butter until fluffy. Add curd and beat them.
  3. Add some dry ingredients in 2 parts towards the butter mixture, alternating two times using the melon pure. After each addition, stir the mix until smooth. Make sure clean the batter in the edges and bottom from the bowl. Then mix the batter on medium-high for around 2 min.
  4. Pour the batter right into a greased and floured tube cake pan. Bake 50 min. or simply until a cake tester arrives clean. Meanwhile, prepare the glaze by mixing confectioners’ sugar using the lemon or orange juice until smooth.
  5. Awesome the wedding cake in the pan for 10 min. then transform it out onto a rack.
  6. Inside a double boiler or microwave .melt the white-colored chocolate .
  7. Now Add 2 drops of melon essence and blend it
  8. Spoon or pour glaze within the warm cake.
  9. Decorate with a few chocolate chocolate..
