- 1 ½ cups sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- 5 eggs
- 3/4 cup lime juice
- 1 teaspoon lemon extract
- 2 cups plain flour
- ½ teaspoon sodium bicarbonate
- 1 (3 ounce) package lime gelatin
- 1 ½ cups vegetable oil
- ½ teaspoon vanilla
Icing:
- 2/3 cup lime juice
- 2/3 cup powdered sugar
- 1 ounce cream cheese, softened
- 1 stick butter
- 1 box powdered sugar
Directions.
- Preheat oven to 350 levels. Grease 3 8-inch cake pans or 1 9x13 inch pan.
- Put first 11 ingredients in large bowl and blend at low speed until moist. Beat two to four minutes at medium speed.
- Pour into prepared pan(s). Bake 30-40 minutes.
- Mix 2/3 cup lime juice and a pair ofOr3 cup powdered sugar. When cake comes from the oven and it is still warm, prick throughout with toothpick. Pour lime juice mixture over cake.
- Mix together cream cheese, butter and powdered sugar and blend well. Spread on cake.
