Kicked-Up Cheddar Cheese Sauce

  • 2 cups (480ml) dairy (no substitutions)
  • 1/4 cup (60g) unsalted butter
  • 1/4 cup (31g) all-purpose flour (measured properly )
  • 2 cups sharp cheddar cheese, grated
  • two tablespoons hot sauce
  • 1 teaspoon red pepper cayenne
  • salt + pepper to taste

Directions:

  1. Heat the milk inside a large saucepan over medium heat before you see bubbled developing on top.
  2. Meanwhile, melt the butter in another saucepan over medium heat. Sprinkle the flour outrageous, stirring constantly until a thick paste forms, one to two minutes.
    Gradually add some warm milk towards the flour and butter paste in a steady flow, whisking constantly. Continue cooking, whisking constantly before the mixture thickens, about a few minutes.
