I’ve been searching for many new methods to eat chicken and discovered this jewel! It was very easy to throw together also it had my personal favorite southwest flavors. I’m calling it a Burrito bake since it has all of the aspects of a burrito, just with no tortilla! I shredded my chicken a tad too much I believe, so make certain you depart your chicken in bigger pieces. It was a fast, simple and easy , scrumptious dinner! All it required was stirring all of the ingredients together inside a bowl and baking! I offered it alongside chips salsa also it was good using the chips drizzled with. I believe the leftovers could be great inside a quesadilla too. I really like this is healthier too with brown grain and only light sour cream or greek yogurt!

Ingredients:
2 large chicken breasts, cooked and shredded
4 cups cooked brown grain*
3/4 cup corn (may use frozen or canned, drained)
1 (15 oz.) can black beans, drained rinsed
1 cup light sour cream (or plain greek yogurt)
3/4 cup salsa
1 (4 oz.) can eco-friendly chiles

1 cup shredded cheddar monterey jack cheese (or cheese of your liking), plus much more for topping
1/4 teaspoon. salt
1/8 teaspoon. freshly ground pepper to taste
Pinch ground red pepper cayenne
taco sauce, cilantro additional sour cream for topping

Directions:
Preheat oven to 350 levels.

Inside a large bowl add chicken, grain, corn, black beans, sour cream, salsa, eco-friendly chiles, cheese, pinch of cayenne, then salt pepper. Stir lightly until all ingredients are fully incorporated. Increase the salt pepper to taste, if required. Pour into baking dish (either 9吉 or two 8࡮ dishes) and spread mixture evenly. Top with a lot more cheese and bake for 25 minutes, until cheese has melted and mixture is heated through.

Top with taco sauce, sour cream and cilantro for serving.

*For any really quick meal, get a rotisserie chicken out of your local grocer and shred the chest. Then for that grain, get 2 packages of Uncle Ben’s Ready Brown Grain. microwave or prepare around the stovetop and it'll get together very quickly!

*Edited 1.16.13: My pal chose to make this for me personally after surgery this fall and that i just attempted her version. She added 1/2 onion chopped and used only two glasses of brown grain. I managed to get by doing this a week ago also it switched out creamier as well as much better than the very first version, so I'll be which makes it by doing this in the future.
