Chicken Curry with Yams and Coconut (serves 8 approximately. $2.96/serving)

1 chicken, reduce 10 pieces approximately

two tablespoons curry powder

1 teaspoon kosher salt

1/4 cup essential olive oil

4 sweet taters, peeled and chopped

7 garlic clove cloves, crushed

2 shallots, roughly chopped

4 15-oz cans coconut milk

2 stalks lemongrass, chopped

3 carrots, peeled and chopped into 1 1/2 pieces

  • Nederlander oven
  • Slotted spoon
  • Two plates lined with sponges
  1. Combine the curry powder and salt.  Sprinkle it within the chicken pieces and hang aside while prepping another ingredients.
  2. Heat the oil within the Nederlander oven.
  3. Brown the sweet taters within the oil for around a few minutes.  Evacuate to some towel-lined plate using the slotted spoon.
  4. Brown the chicken within the oil.  Evacuate to another plate.  
  5. Lessen the heat just a little and add some garlic clove and shallots.  Saute until gently golden.
  6. Add some coconut milk, lemon grass and carrots.  Bring to some boil.
