Rub the chicken's ft using the salt and chop from the nails.
Wash completely, blanch in boiling water for one minute and drain.
Brush using the dark soy sauce and chop each feet into 2 sections.
Deep-fry within the boiling oil until golden brown and drain, keeping 1 tablespoon of oil for later.
Refresh within cold running tap and drain.
Pour water right into a pressure oven.
Add some ginger root, chives, star anises and chicken's ft and prepare for fifteen minutes.
Heat a wok using the 1 tablespoon of oil and saute the mashed garlic clove, black bean paste and diced chilies until aromatic.
Make the chicken's ft and stir-fry completely.
Sizzle within the wine and add all of the seasoning except the cornflour and water mixture.
Adjust the taste to taste.
Pour within the stock in the pressure oven, cover and simmer for five minutes.
Thicken the sauce using the cornflour and water mixture.
