Recipe rotisserie chicken and noodles

8 ounces wheat grains spaghetti or soba noodles
Salt
About 1/4 cup soy sauce or Tamari
two tablespoons grain wine vinegar
two tablespoons chili-garlic clove sauce (I such as the one using the rooster around the label)
Juice of just one lime
1 tablespoon light honey or light agave
1 " ginger root, peeled and grated
1 clove garlic clove, grated
3 tablespoons peanut oil
1 bunch scallions, sliced on the bias

1/2 red onion, finely chopped
1/2 cup dry roasted peanuts, chopped
1 cup tulsi, torn or chopped
1 rotisserie chicken, skin and bones removed and meat shredded
2 cups shredded iceberg lettuce or heart of Romaine
Pepper

Bring a pot water to some boil, add salt and prepare soba or pasta to al dente based on package directions. Drain and awesome.

Whisk up soy or Tamari, vinegar, chili-garlic clove sauce, lime juice, honey or agave, ginger root, garlic clove and oil inside a large serving bowl. Add scallions, red onion, peanuts, tulsi, chicken, cold noodles and lettuce, and toss to mix. Adjust flavors/seasonings, adding pepper and salt to taste.
