Chicken afritada kapampangan recipe mechado

Chicken Afritada is meat stewed in tomato sauce. This is actually the simplest among other stewed meat in tomato sauce when compared with mechado, kaldereta and menudo.

I select pizza in my afritada since it has good balance of fats and lean meat. Chicken fats really adds flavor towards the dish.

Recipe Ingredients:

  • 1/2 kilo pizza (cut on joints)
  • 1/2 cup tomato sauce
  • 1 red onion (Sliced)
  • 1 mind garlic clove (chopped)
  • 1 piece medium size potato (chopped into cubes)
  • 1 piece carrot (chopped)
  • 2 pieces peppers (eco-friendly and red, sliced into strips)
  • Fish sauce (patis) for seasoning
  • two tablespoons of oil for sauteing

Recipe Cooking Procedure:

  1. Saute garlic clove and onion.
  2. Add chicken meat and stir fry until its color switch to slightly brown.
  3. Add tomato sauce and water sufficient to pay for the chicken meat. Provide boil then lower heat and simmer for around twenty minutes or until meat is tender. Cover the pan during cooking.
  4. Add potato, peppers and carrot and continue cooking until vegetables are tender.
  5. Finally, add patis for seasoning.
  6. Serve while still hot.
