Ingredients

  • 8 large, skinless chicken drumsticks
  • 150g free of fat low fat yogurt
  • 1 tablespoons of mild curry powder
  • 1 teaspoon turmeric
  • 5 tablespoons of finely chopped coriander
  • 5 tablespoons of finely chopped mint
  • Finely grated zest and juice of just one lime
  • Salt and freshly ground pepper

Method

  1. Having a sharp knife, create a couple of cuts within the flesh of every drumstick.
  2. Put the remaining ingredients inside a mixer and blend until fairly smooth. Transfer to some wide ceramic bowl and season to taste.
  3. Add some drumsticks towards the marinade, rubbing the mix well in to the meat.
  4. For those who have time, cover and chill for 1-2 hrs or overnight if time permits.
  5. Take away the drumsticks in the marinade, trembling from the excess. Prepare them around the barbecue for 25-25 minutes, turning from time to time, until cooked through. Serve warm or cold.
