Ingredients

  • 1/4 cup sugar
  • two tablespoons water
  • 10 medium shallots, coarsely chopped
  • 5 tablespoons Cognac
  • 3 sticks (3/4 pound) plus 4 tablespoons unsalted butter, at awesome 70 degrees, reduce tablespoons

Steps to make this recipe
