Rub the chicken's ft using the salt and chop from the nails.
  • Wash completely, blanch in boiling water for one minute and drain.
  • Brush using the dark soy sauce and chop each feet into 2 sections.
  • Deep-fry within the boiling oil until golden brown and drain, keeping 1 tablespoon of oil for later.
  • Refresh within cold running tap and drain.
  • Pour water right into a pressure oven.
  • Add some ginger root, chives, star anises and chicken's ft and prepare for fifteen minutes.
  • Heat a wok using the 1 tablespoon of oil and saute the mashed garlic clove, black bean paste and diced chilies until aromatic.
  • Make the chicken's ft and stir-fry completely.
  • Sizzle within the wine and add all of the seasoning except the cornflour and water mixture.
  • Adjust the taste to taste.
  • Pour within the stock in the pressure oven, cover and simmer for five minutes.
  • Thicken the sauce using the cornflour and water mixture.
