The term Tikka means bits, pieces or chunks. Chicken Tikka is a straightforward-to-prepare dish by which chicken chunks are marinated in special spices after which grilled on skewers. This is among India's most widely used dishes. Chicken Tikka may also be converted to Chicken Tikka Masala, a tasty gravy dish.

Ingredients
  • 1 cup fresh unsweetened yogurt (shouldn't be sour)
  • 1 cup finely chopped fresh coriander leaves
  • 2 tbsps ginger root paste
  • 3 tbsps garlic clove paste
  • 3-4 tbsps garam masala
  • 6 peppercorns/ 2 dry red chillies
  • 3 tbsps lime/ fresh lemon juice
  • 1/2 teaspoon orange food coloring
  • 1 kg chicken (breast or leg) skinless and reduce 2" chunks
  • 1 large onion reduce very thin rings
  • Lime/ lemon wedges to garnish
  • 1 teaspoon Chaat Masala (offered at most Indian groceries)

Preparation
  • Grind the chopped coriander (keep some aside for garnishing) and all sorts of other marinade ingredients (except yogurt) to some smooth paste inside a mixer .
  • Pour the above mentioned mix right into a large bowl and add yogurt. Mix well. Add some chicken pieces and blend well. Cover the bowl and refrigerate. Let it marinate overnight.
  • Thread the chicken onto skewers and ready.
  • Preheat your oven or grill to some medium hot temperature (200 C/ 400F/ Gas Mark 6).

  • Put the skewers around the grill racks inside your oven having a tray underneath to trap drippings. Roast open up until the chicken is browned on every side and tender.
