Many people remember football games, school journeys or favourite songs once they consider their earliest recollections. I don’t! Mealtimes will always be the primary link tomy childhood: tables filled with scrumptious food, pack-ups made by Momma Wan full of Chinese surprises, or distinctive flavours that signified a meeting. This dish of deep-fried, paper-bagged chicken and prawns is really baked into my recollections, even the thought of eating it now makes me seem like I’m 10 years old again. Father would prepare this within the restaurant at Chinese Year. Our customers would ‘oooh’ and ‘ahhh’ once we placed plates filled with wrapped-up presents before them as though it had been Christmas morning. It had been wonderful to look at them unwrap the parcels, which looked similar to the picture opposite. My form of this very
special dish continues to be baked within the oven – much simpler to attain in your own home, and far healthier too.
