Caramel pecan chocolate chip cookie recipe
Ingredients
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, 70 degrees
  • 1 large egg
  • 1 teaspoon vanilla flavoring
  • 1 1/2 cups sifted all-purpose flour
  • 1/2 teaspoon sodium bicarbonate
  • 1/2 teaspoon salt
  • 3 ounces chopped chocolates (suggested: 2 (1.5 ounce) Godiva Chocolates Bars)
  • 1/2 cup chopped pecans
  • 18 pieces chocolate or vanilla caramels (suggested: Godiva chocolate or vanilla caramels)

Special Equipment: 1 (2-ounce) frozen treats scoop, one or two half-sheet pans, parchment paper

Preheat the oven to 375 levels F.

Inside a large mixing bowl, cream the sugars and butter together until fluffy, using either an electrical mixer or by hands. When mixture is light and fluffy, add egg, and beat to include. Add vanilla and beat to include.

In another bowl, sift together the flour, sodium bicarbonate. and salt. Add dry ingredients gradually to butter mixture and blend to completely combine until a gentle dough is created. Stir in chopped chocolate and pecan pieces until blended.

Having a (2-ounce) frozen treats scoop. scoop cookie dough and put 1 caramel into the foot of each cookie, using extra dough to pay for the caramel that it is not visible. Gently press each cookie to the sheet pan or baking sheet, in rows of three by 4. Repeat until no dough remains. Bake for ten to twelve minutes, or until cookies are golden on the top. More baking time may be required, based on your oven.
