Dark chocolate bordeaux candy recipe

Makes 64 servings

1/4 cup butter 2 1/2 cups packed brown sugar 3/4 cup evaporated milk 2 tbsp .. light corn syrup 1 teaspoon. vanilla flavoring 1/2 cup chocolates chips

Recipe Directions for Bordeaux (like See's Chocolate)

  1. Spray an 8 square pan with pan spray. Put aside.
  • Inside a heavy 3 quart saucepan, melt butter. Add sugar, evaporated milk and corn syrup stir well. Provide a complete, moving boil over medium heat, stirring constantly.
  • Cover pan and continue boiling very lightly over low heat for 2 minutes. Remove cover and scrape sides of pan with rubber scraper.
  • Continue boiling, uncovered, over low heat until mixture reaches 236'F on the chocolate thermometer. (There is no need to stir mixture during cooking, though lightly scraping sides of pan occasionallyis desirable. Don't SCRAPE BOTTOM OF PAN.)
  • Pour mixture right into a heat-proof bowl. Don't scrape sides and bottom of pan. Place chocolate thermometer in mixture. Place bowl in 1/2 of lukewarm water. Awesome mixture to 110'F without stirring.
  • Add vanilla. Beat mixture until it thickens and begins to lose its gloss (note from Lisa: It does not really lose its gloss greatly. I believed that out after twenty minutes of beating. Just beat it about a few minutes. Which should get it done.) Stir in choc chips. Pour into greased pan. Awesome until firm (the fridge does nicely). Reduce 1 squares. Store in covered container.
  • Now, go be sick!
