Ingredients

1/2 cup plus 1 tablespoon organic all-purpose flour 1/2 cup organic wheat grains pastry flour 1/2 cup Nederlander-process cacao powder 1/2 cup minus 1 tablespoon organic granulated sugar 1/4 cup organic whole cane sugar, ground inside a blender until powdered 2 tablespoons arrowroot or organic corn starch 1 teaspoon aluminum-free baking powder 1/2 teaspoon fine ocean salt 1/4 cup plus two tablespoons mild tasting extra-virgin essential olive oil or perhaps an organic neutral vegetable oil 1/2 cup pure walnut syrup, Grade B or dark amber 1/4 cup any nondairy milk 1/2 teaspoon chocolate extract (optional) 1/2 cup vegan choc chips or small chunks, heaping 1/3 cup gently toasted walnuts or mixed nuts, coarsely chopped (optional)

Instructions

  1. Position a rack in the center of the oven and preheat to 350F. Oil an 8 x 8-inch pan and line the underside with parchment paper. Don't oil paper.
  2. Place wire mesh strainer on the medium bowl. Add all-purpose flour, pastry flour, cacao, granulated sugar, whole cane sugar, arrowroot or corn starch, baking powder, and salt towards the strainer and stir having a whisk to sift the components in to the bowl. Or no small bits stay in the strainer, increase mixture within the bowl. Whisk to aerate the mix.
  3. Whisk oil, walnut syrup, nondairy milk, vanilla and chocolate extract, if using, in separate medium bowl until completely combined. Pour into dry ingredients and blend having a silicone spatula until batter, which is thick, is smooth. Allow batter to relax for 10 mins.
  4. Stir choc chips and nuts, if using, into batter. Spoon batter in to the prepared pan, and sprea a level layer having a metal spatula.
  5. Bake for 23 minutes until top is placed and dry and also the sides have pulled just slightly from the pan.
  6. Remove pan in the oven and hang on the cooling rack. Immediately insert a wood tester diagonally in to the brownies. The tester is going to be coated with batter, although not wet. If required, bake another minute.
  7. Awesome to 70 degrees. The center of the wedding cake will sink because it cools. Once cold you are able to push the edges lower to level the wedding cake if you want. Refrigerate until cold before cutting into squares.
