Ingredients
- three or four bunches (2 1/2 pounds total) flat-leaf green spinach, trimmed and cleaned
- two tablespoons butter
- 1/2 medium onion, minced
- 4 garlic clove cloves, minced
- 4 ounces bar cream cheese, reduce pieces
- 1/2 cup milk
- pinch ground nutmeg
- coarse salt and ground pepper
Directions
Bring a sizable pot of salted water to some boil. Add green spinach, and prepare just until wilted, about one minute. Drain inside a colander rinse with cold water until awesome. Squeeze green spinach to get rid of just as much liquid as you possibly can coarsely chop, and hang aside.
Inside a large saucepan, heat butter over medium. Add onion and garlic clove season with pepper and salt. Prepare, stirring from time to time, until onion softens, three to five minutes.
Add cream cheese and milk prepare, stirring, until cream cheese is melted and smooth. Stir in green spinach. Simmer over medium heat until mixture thickens, eight to ten minutes. Add nutmeg season with pepper and salt.
Cook's Notes
When you are prepared to prepare green spinach, discard any yellow leaves and hard stems. Green spinach could be gritty, to fix it, swish it around in a number of changes of awesome water until there is no grit left at the end from the bowl.
