These simple chicken quesadillas obtain a vibrant, fresh flavor from adding cilantro, scallions and jalapeño peppers. A layer of cream cheese adds a creamy texture along with a nice contrast towards the heat from the jalapeños and pepper jack cheese.

Easy Chicken Quesadillas

  • Ingredients:
  • 3 cups shredded cooked chicken (see below)
  • 1/2 cup cream cheese, softened
  • 1/2 to at least one teaspoon hot sauce
  • 4 8-inch flour tortillas
  • one or two jalapeño peppers, seeded and chopped
  • 1 medium tomato, seeded and chopped
  • 4 scallions, sliced (about 1/4 cup)
  • 1/2 cup fresh cilantro, finely chopped
  • 2 cups pepper jack cheese, coarsely shredded
  • Salt and freshly ground pepper
  • two tablespoons vegetable oil

Preparation:
Combine the cream cheese and hot sauce in a tiny bowl until creamy. Lay the tortillas on the flat working surface and divide the cream cheese mixture together. Spread within the entire surface to within 1/2-inch from the edge.

Combine the jalapeños, tomato, scallions and cilantro inside a separate bowl. Season with pepper and salt. Arrange some evenly over 1 / 2 of each tortilla and top about 1/2 cup from the shredded cheese. Give a part of chicken and top using the remaining pepper jack. Fold the tortillas in two.
