Ingredients
- 1-1/2 cups flour
- 2/3 cup firmly packed brown sugar
- 1 teaspoon. sodium bicarbonate
- 1/2 teaspoon. ground cinnamon
- 1/4 teaspoon. salt
- 1 egg
- 1-1/2 cups fat-free milk
- 2 tablespoons of. oil
- 3 cups Publish Bran Flakes
- 1/3 cup raisins
Directions
- Mix flour, sugar, sodium bicarbonate, cinnamon and salt in large bowl. Beat egg in normal size bowl stir in milk and oil. Increase flour mixture stir just until moistened. (Batter is going to be lumpy.) Stir in cereal and raisins. Spoon batter into muffin pan that has been sprayed with cooking spray, filling each cup 2/3 full.
- Bake at 400°F for 25 to 25 minutes or until gently browned. Serve warm.
