Bailey's Chocolate Cheesecake

This Bailey's Chocolate Cheesecake is made from a chocolate crust, and creamy chocolate filling having a hint of Bailey's.

Ingredients:

Crust Ingredients:

  • 1 1/2 cups chocolate graham cracker (or chocolate cookie) crumbs
  • 1/3 cup powdered (confectioner's) sugar
  • 1/3 cup unsweetened cacao powder
  • 1/4 cup (half a stick) butter, melted

Cheesecake Ingredients:

  • 3 (large) packages cream cheese, softened (I made use of 1/3 less fat)
  • 1 1/4 cups white-colored sugar
  • 1/4 cup unsweetened cacao powder
  • 3 Tablespoons of. all-purpose flour
  • 3 eggs
  • 1/2 cup sour cream
  • 1/2 cup Bailey's (or any other Irish cream liqueuor)

Chocolate Ganache Ingredients (Optional):

  • 1/2 cup heavy cream (or half and half)
  • 4 ounces chocolates

Directions:

Preheat oven to 350 levels F. Inside a large bowl, mix together the cookie crumbs, confectioners' sugar and 1/3 cup cacao. Add melted butter and stir until well mixed. Pat into the foot of a 9-inch well-greased springform pan. Bake in preheated oven for ten minutes put aside. Increase oven temperature to 450 levels.

Inside a large bowl, combine cream cheese, white-colored sugar, 1/4 cup cacao and flour. Beat at medium speed until blended and smooth. (Do not over-mix!) Add eggs individually, mixing well after each addition. Merge the sour cream and Irish cream liqueur mixing on low speed until blended. Pour filling over baked crust.

Optional: To avoid cracking within the cheesecake, I am a large fan water baths! Just fill a 9x13 (or whatever size) glass pan midway with water, and put it at the base rack as the oven preheats, after which as the cheesecake cooks.

Put the cheesecake within the oven in stock over the water bath, and bake at 450 levels for ten minutes. Reduce oven temperature to 250 levels, and continue baking for an hour.

Having a knife, release cake from rim of pan. Let awesome, then take away the rim of pan. Chill for any couple of hrs before serving.

Optional: To organize the ganache, put the choc chips inside a bowl. Then heat the cream (or half and half) in a tiny saucepan over medium-low heat until it's almost boiling. Remove from heat, and pour within the choc chips and let take thirty seconds. Then stir before the choc chips have melted and therefore are included well. Pour over the top cheesecake, and sprinkle with choc chips or chocolate shavings if you want.
