Wonderful roasted chicken. I chose to make this recipe as written, except with no clay pot/cooking method. I needed to create a whole chicken, in order to have leftovers for an additional recipe, and located this recipe within our team cook book. This made probably the most scrumptious gravy all the vegetables, lemon slices and butter/plant flavor chicken juice. As it is mid summer time within Florida, so hot and damp, we roasted the chicken on the grill/covered and stored a thermometer to look out for correct temperature.
