I volunteer in my local public TV station and it was co-chair from the food committee that provided food and snacks for volunteers staff in a major fund raiser within the late spring. I developed this recipe as a substitute for mayonnaise based coleslaw dressing because the food required to endure within the heat from the outdoors.
