Soft & Thick Peanut Butter Cookie Recipe

The cookies are soft, thick, puffy, and can melt inside your mouth. They aren't hard or crunchy like traditional peanut butter cookies. Actually, they get softer on day 2 and day 3.

Soft & Thick Peanut Butter Cookie Recipe

The softest, thickest peanut butter cookies!

Yield: a couple of dozen cookies

Ingredients:

  • 1/2 cup (1 stick) salted butter, softened to 70 degrees
  • 1/2 cup brownish sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 3/4 cup creamy peanut butter
  • 1 teaspoon vanilla flavoring
  • 1/2 teaspoon sodium bicarbonate
  • 1 and 1/4 cups all-purpose flour

Directions:

Inside a large bowl having a handheld or stand mixer, cream butter and sugars together until light and fluffy. Add peanut butter, then your egg, and so the vanilla. Gradually add the dry ingredients. Don't overmix. Chill dough not less than half an hour.

Preheat oven to 350 levels. Remove chilled dough from fridge and roll into balls. Spread a skinny layer of granulated sugar on the plate and roll each dough ball to evenly coat (if preferred).

With an ungreased baking sheet, bake for 8-9 minutes, before the tops start to *slightly* crack. Don't bake more than this. Cookies will appear un-tied, and can set because they awesome. Press a chocolate heart into each cookie and rapidly stick the baking sheet within the freezer or fridge therefore the warm cookie doesn't completely melt the chocolate heart. Allow the chocolate set (about fifteen minutes) around the cookies within the freezer/refrigerator.

Cookies stay fresh and soft within an airtight container for approximately ten days.
