Brown sugar cookie recipe cooks illustrated

Preparation

1. Heat 10 tablespoons butter in 10-inch skillet over medium-high temperature until melted, a couple of minutes. Still prepare, swirling pan constantly until butter is dark golden brown and it has nutty aroma, one to three minutes. Remove skillet from heat and transfer browned butter to large heatproof bowl. Stir remaining 4 tablespoons butter into hot butter to melt put aside for fifteen minutes.

2. Meanwhile, adjust oven rack to middle position as well as heat oven to 350 levels. Line 2 large (18 by 12-inch) baking sheets with parchment paper. In shallow baking dish or cake plate, mix granulated sugar and 1/4 cup packed brown sugar, rubbing between fingers, until well combined put aside. Whisk flour, sodium bicarbonate, and baking powder together in medium bowl put aside.

3. Add remaining 1 3/4 cups brown salt and sugar to bowl with cooled butter mix until no sugar protuberances remain, about thirty seconds. Scrape lower sides of bowl with rubber spatula add egg, yolk, and vanilla and blend until fully incorporated, about thirty seconds. Scrape lower bowl. Add flour mixture and blend until just combined, about one minute. Give dough final stir with rubber spatula to make sure that no flour pockets remain and ingredients are distributed.

4. Divide dough into 24 portions, each a couple of tablespoons, moving between hands into balls about 1 1/2 " across. Employed in batches, toss balls in reserved sugar mixture to coat and hang on prepared baking sheet, spacing them a couple of inches apart, 12 dough balls per sheet. (Smaller sized baking sheets may be used, but it'll take 3 batches.)

5. Bake one sheet at any given time until cookies are browned but still puffy and edges have started to set but centers continue to be soft (cookies will appear raw between cracks and appear underdone see photo below), 12 to 14 minutes, rotating baking sheet midway through baking. Don't overbake.

6. Awesome cookies on baking sheet a few minutes using wide metal spatula, transfer cookies to wire rack and awesome to 70 degrees.
