Peppers are full of a tuna and chopped vegetable stuffing mixture, capped with potato nick crumbs. This can be a very tasty combination for stuffed peppers.

Ingredients
  • 6 medium eco-friendly peppers
  • salt
  • 1 1/2 cups cooked grain
  • 1 can or pouch (about 7 ounces) tuna, drained and flaked
  • 1/2 cup chopped celery
  • two tablespoons finely chopped onion
  • two tablespoons finely chopped canned pimiento
  • 1/2 teaspoon salt
  • dash pepper
  • 3/4 cup mayonnaise
  • 1/2 cup crushed poker chips

Preparation

Cut peppers in two lengthwise remove tops and seeds. Prepare peppers in a tiny bit of boiling salted water for around a few minutes drain. Sprinkle peppers inside after some salt devote a shallow baking dish. Inside a bowl, combine grain with tuna, celery, onion, pimiento, 1/2 teaspoon salt and dash pepper. Lightly stir in mayonnaise until well blended. Spoon tuna grain mixture into pepper shells. Pour about 1/2 cup water in to the baking dish around tuna and grain stuffed peppers.

Sprinkle potato nick crumbs over surface of each stuffed pepper. Bake tuna grain stuffed peppers at 350° for half an hour. Makes 6 tuna and grain stuffed peppers.
