She's an aficionado of proper food and never too surprisingly a perfectionist in the kitchen area. At Kavita's parties, the mealsis the entertainment! Before I had been at her place, I fell deeply in love with this cauliflower roast and Kavita continues to be kind enough to talk about the recipe around. So here you go in her own words, Cauliflower Roast with the spicy details. enjoy!

Ingredients:

Cauliflower- 1, stem removed and stump scored
Ginger root- 1.5 inches/10gm
Garlic clove- 6 cloves
Eco-friendly chilies- 2
Onion- 1 large/ 300gm, grated
Oil- half cup
Tomato paste- 4 Tablespoons of
Turmeric powder -1/2 teaspoon
Freshly ground cumin powder- 1/2 teaspoon
Freshly ground coriander powder- 1 teaspoon
Kashmiri mirch powder- 2 teaspoon
Yogurt- 1/2 cup, whisked till smooth

Freshly ground garam masala powder- 1 heaped teaspoon
Sugar- 1/4 teaspoon
Cilantro- 1 Tablespoons of, chopped
Cream- 2 Tablespoons of

Procedure:

1. Immerse the cauliflower inside a brine made from 4 glasses of water and a pair of teaspoon of salt. Permit the cauliflower to sit down within this brine for half an hour. Take it off and let it dry.
2. Grind together the ginger root. garlic clove and eco-friendly chilies to create a fine paste.
3. Heat oil inside a large, deep heavy bottom fry pan (or nederlander oven, eg. Le Creuset ). Add some grated onions and fry it on the medium low flame till it turns golden brown.
4. Add some ginger root garlic clove paste, tomato paste, turmeric, coriander powder, cumin powder, chilli powder, 1/4 cup water and salt to taste (approximately. 2.5 teaspoon).
5. Add some yogurt. a table spoon at any given time till all of the yogurt continues to be incorporated and also the oil separates in the masala.
6. Add the heaped teaspoon of freshly ground garam masala and sugar.
7. Put the entire cauliflower and stir fry for around 8 minutes and finish using the cauliflower stump facing up.
8. Put the fry pan using the cauliflower inside a preheated 350 degree F oven. Gently cover by having an aluminum foil and bake for around fifteen minutes.
9. After about fifteen minutes enhance the temperature from the oven to 400 levels F, take away the foil which time put the cauliflower stump facing lower.
10. After about twenty minutes, look for doneness. The cauliflower should hold its shape and never be mushy.
11. Put the cauliflower on the platter and pour the masala regarding this. Garnish with cream and cilantro.

Optional: lay the cauliflower on the bed of fried potato wedges/ half moons or higher a bed of butter lettuce.
