Salmon with wilted greens recipe

Ingredients

  • 1 pound fresh or frozen salmon fillets (thawed)
  • 1/2 cup plus 1 Tablespoons of. canned Asian salad dressing, for example sesame ginger root
  • 6 cups torn mixed salad vegetables
  • 1 medium orange, peeled and sectioned

Directions

  1. Rinse salmon pat dry. Reduce 4 pieces. Broil salmon on greased unheated rack of broiler pan 4 inches from heat for six to 9 minutes or until salmon starts to flake easily. Midway through broiling, brush with 1 tablespoon from the dressing. Cover keep warm.
  2. In salad bowl combine vegetables and orange sections. In large skillet bring remaining 1/2 cup dressing to boiling. Boil lightly, uncovered, one minute. Remove from heat. Pour over vegetables toss.
  3. Divide vegetables among 4 serving plates. Top with salmon. Serve immediately. Makes 4 servings.
