Pan Seared Lemon Pepper Salmon

  • 2 center cut salmon filets (6 oz each)
  • 1½ Tablespoons essential olive oil
  • 1½ Tablespoons fresh lemon juice
  • Coarse pepper (I love to use lawry's seasoned pepper)
  • 2 lemons
  • simple salad:
  • 3 cups baby arugula/ green spinach vegetables
  • ½ cup cherry tomato plants, halved
  • ¼ cup thinly sliced red onion
  • pepper and salt
  • 1 Tablespoon extra virgin essential olive oil
  • 1 Tablespoon dark wine vinegar
  1. Heat a medium non-stick skillet on medium heat. Even though it is heating, whisk together inside a bowl essential olive oil and fresh lemon juice. Sprinkle the salmon fillets with pepper and coat both sides within the essential olive oil and fresh lemon juice. Allow them to rest within the bowl before the pan is preheated.
