I've this recipe -

Madeleines (Covering-formed Tea Cakes)
Yield 12 to fifteen little cakes

4 1/2 ounces sugar
3 3/4 ounces all-purpose flour, sifted
1/2 teaspoon baking powder
Pinch of salt
Zest of just one orange
2 large eggs, at 70 degrees
3 1/4 ounces unsalted butter, melted and cooled slightly
Butter and flour for molds


Combine the sugar, flour, baking powder and salt inside a medium mixing bowl, stirring having a wooden spoon to combine. Add some zest. Stir within the eggs, mixing simply to combine. You don't want to include an excessive amount of air in to the batter. Finally, stir within the butter.

Cover the bowl with plastic film and refrigerate for one hour, or until well chilled. The chilling is essential, because it helps make the batter simpler to pipe and ensures a greater rise during baking. At this time, the batter might be stored, covered and refrigerated, for approximately 4 days.
Butter and flour the madeleine molds.
Preheat the oven to 400 levels.
