I frequently think it is amusing whenever I see ‘Singapore Fried Noodles’ around the menu inside a Chinese restaurant. It is because you won’t find ‘Singapore Fried Noodles’ offered within my native hometown of Singapore. Even though many hawker stalls sell fried vermicelli or noodles like a simple breakfast dish, it’s not considered a signature dish like Laksa or Char Kway Teow. Rather they’re offered ready-covered with simple brown paper packets for that breakfast crowd to get rapidly on the run.

So, the way a simple home-style Asian noodle dish grew to become referred to as ‘Singapore Fried Noodles’ overseas remains a mysterious in my experience. That stated, fried noodles are not only seen tasty, but simple cooking up rapidly for any weeknight dinner.

My form of fried noodles are similar to the type offered in hawker stalls over Singapore. However, I’ve substituted the standard Hokkien noodles with wheat noodles that are simpler to acquire within Australia.

This dish is really easy to prepare in your own home, you’ll never order ‘Singapore Fried Noodles’ again.

Fundamental Fried Noodles

2 servings, like a primary

2 bundles/servings dried wheat noodles
1 chicken white meat, sliced
handful garlic clove chives, sliced into 1″ (3cm) lengths
1 clove garlic clove, minced
1 tablespoons of (15ml) sesame oil or vegetable oil
2 tablespoons of (30ml) vegetable oil, for frying
2 tablespoons of (30ml) dark soy sauce
chilli sauce, for everyone (optional)

Prepare the dried noodles in boiling water based on packet directions, until al dente. Drain and toss through sesame oil to avoid noodles from sticking. Put aside.

Heat vegetable oil over high temperature inside a wok or fry pan until hot. Add garlic clove and fry for one minute until aromatic. Add chicken and fry until browned, about 3-a few minutes.

When chicken is cooked, add noodles, soy sauce and garlic clove chives. Toss together for an additional 1-2 minutes before the chives start to turn an excellent shade of eco-friendly. Don't overcook or even the chives will wilt.

Remove from heat and serve immediately. Serve with chilli sauce quietly, if preferred.
