    • 1 lb chicken white meat (sliced)
    • 1 onion (peeled and sliced)
    • 2 crushed garlic clove cloves
    • 2 tablespoons of groundnut oil
    • 1 carrot (thinly sliced into matchstick size)
    • 1/2 capsicum (seeded and sliced)
    • 3-4 tablespoons of peanut butter
    • garnish:
    • 1 tablespoons of chopped coriander
    • 1 tablespoons of chopped nuts
    • marinade:
    • 2 tablespoons of light soy sauce
    • 1 tablespoons of vinegar
    • 1 teaspoon sugar
    • 1 teaspoon chinese five-spice powder
    • 2 crushed garlic clove cloves

    Method

    1. Slice chicken white meat into strips and blend using the soy sauce, vinegar, sugar, five-spice and garlic clove. Cover and then leave to marinade within the fridge not less than 30min.
    2. Drain the chicken, reserving any marinade.
    3. Heat the wok, adding the groundnut oil. When hot, add 2 garlic clove cloves, onion and chicken and stir-fry for several min.
    4. Add remaining veggies and stir-fry for 4 min or until meat is tender and veggies have softened
    5. Blend the reserve marinade, the peanut butter and a pair of tablespoons of of warm water. When smooth, stir in to the wok for a few minutes before the sauce is thick.
    6. Serve on the bed of jasmine grain and sprinkle with coriander and chopped nuts
