- 2 cups (250g) plain flour
- 1 teaspoon salt
- 1 1/2 teaspoons bicarbonate of soda
- 1/3 cup (50g) unsweetened cacao powder
- 1 cup (220g) white-colored sugar
- 2 eggs
- 2 cups grated zucchini
- 1/2 cup (125ml) vegetable oil
- 1 teaspoon vanilla essence
- 1/2 cup chopped walnuts

- Preheat oven to 180 levels C. Grease a 25cm x 40cm jellyroll roll cake tin.
- Inside a large mixing bowl sift together flour, salt, bicarb soda, cacao and sugar.
- Combine eggs, zucchini, oil and vanilla then blend into dry ingredients. Stir in walnuts.
- Bake for 25 minutes in preheated oven. Awesome within the tin then reduce squares.
