Ingredients

  • ¾ c. old-fashioned folded oatmeal
  • ¾ c. whole-wheat flour
  • ¾ c. all-purpose flour
  • 2 teaspoon. baking powder
  • 1½ teaspoon. sodium bicarbonate
  • ½ teaspoon. ground cinnamon
  • ½ teaspoon. ground coriander
  • ¾ teaspoon. salt
  • ½ c. honey
  • 2 tablespoons of. honey
  • ½ c. buttermilk
  • ½ c. canola oil
  • 2 large eggs

Directions

  1. Preheat the oven to 375 levels F. Coat a 12-cup muffin pan with cooking spray. Inside a large bowl, mix the oatmeal using the whole-wheat flour, all-purpose flour, baking powder, sodium bicarbonate, cinnamon, coriander, and salt.
  2. In another bowl, whisk the honey using the buttermilk, canola oil, and eggs. Pour the honey mixture in to the dry ingredients mix just until combined.
  3. Spoon the batter in to the prepared muffin cups and bake for around 18 minutes, until they are golden along with a toothpick placed into the middle of the muffins arrives clean.
