Ingredients
- 1 1/4 cups unbleached all-purpose flour
- 1 teaspoon sodium bicarbonate
- 1/2 teaspoon fine salt
- 2 large eggs, at 70 degrees
- 1/2 teaspoon pure vanilla flavoring
- 1/2 cup (1 stick) unsalted butter, at 70 degrees, plus much more for preparing the pan
- 1 cup sugar
- 3 very ripe bananas, peeled and mashed having a fork (about 1 cup)
- 1/2 cup toasted walnut pieces
Directions
Sift the flour, sodium bicarbonate and salt right into a medium bowl put aside. Whisk the eggs and vanilla together inside a liquid calculating cup having a spout put aside. Gently brush a 9-by 5- by-3-inch loaf pan with butter. Preheat the oven to 350 levels F.
Inside a standing mixer fitted using the paddle attachment or by having an electric hands-held mixer, cream the butter and sugar until light and fluffy. Progressively pour the egg mixture in to the butter while mixing until incorporated. Add some bananas (the mix will seem to be curdled, so don't be concerned), and take away the bowl in the mixer .
Having a rubber spatula. add the flour mixture until just incorporated. Fold within the nuts and transfer the batter towards the prepared pan. Bake for 55 minutes or until a toothpick placed into the middle of the bread arrives clean. Awesome the bread within the pan on the wire rack for five minutes. Turn the bread from the pan and let awesome completely around the rack. Wrap in plastic wrap. The blueberry bread is better if offered the following day.
